How much power will I need with this build?
GIGABYTE GA-EX58-UD4P Motherboard
Intel Core i7 950 3.06 GHz –> Will be overclocked, as far as I can go; from what I’ve read, 4.1GHz is pushing it with this chip
3 X Western Digital Caviar Black 1 TB 7200 RPM
Western Digital Velociraptor 300 GB 10000RPM
6 X Corsair Dominator 2 GB DDR3 1600 RAM- 12GB
LG 6X Blu Ray Burner
25.5″ monitor
Maybe–>Kingston 128 GB SSD
3X 230mm Case fans
2X 140mm Case fans
Noctua 120mm CPU cooler
Antec’s Power supply wattage calculator said I need 400 Watts, I thought that seemed awfully low. I have a 750W Corsair I’m thinking about using, will that be sufficient?
Also, will the fans I have listed be good enough cooling? I don’t plan to OC my video card or RAM unless I have to to prevent a bottleneck.

400 Watts is definitely low if you’re using a video card. The Corsair 700 Watt power supply should be fine.
Yeah, your rig should have pretty good airflow with those fans. But most importantly, if you plan on overclocking your CPU you will need a better CPU fan and heat sink. And if you have the budget (seems to me like you do with those components) you could always go for liquid cooling.
